Anthony Bourdain’s Favorite Soup: Bun Bo Hue, Now in El Paso

This weather is wicked! 🌬️🍃.

This is the type of weather for soup since it's so dry out, and I'm feeling like Bun Bo Hue (Vietnamese spicy beef soup).

The differences in Pho and Bun Bo Hue is that, Bun Bo Hue has a spicy paste that gives the soup a kick that is absent in Pho. This paste contains chilli (dried and rehydrated), lemongrass, shallot, garlic, fish sauce, sugar, and salt.

Vietnamese is easy, sometimes a literal translation from English. Bún is noodles, Bò is beef, and Huế is a city in Central Vietnam, which is also the former capital of Vietnam, from where it originated.

Unlike Pho, Bún Bò Huế is also made from pork bones. This can cause a lot of confusion on a menu, especially if you don't eat pork.

Anthony Bourdain once said this is the best soup. That's saying a lot, here's a segment from his search for the glorious soup.

Needless to say, we can't just fly to Vietnam to get the real thing, and It's a pain in the butt to make since the ingredients are hard to source in El Paso, and my kids aren't into it.

Rather than making a pot at home where it will be wasted, I looked up where I could find Bun Bo Hue near me and I found the place. Whenever I'm craving this, I just head over to Pho and Rolls, where they make a great version.

Don't forget the shrimp paste! It'll definitely up the umami factor by 1000x percent!
