They use whatever fresh ingredients they have on hand and incorporate what they're learning. One of my favorites is the chocolate supreme, which is usually only available in New York. 
But luckily, they brought it to El Paso as part of an advanced pastry class. I'll have to wait until the summer to get a taste of it.
